Tuna Sashimi Poke Bowl
Ingredients
100-150g Tuna sashimi (Tip: ask the fish shop to cut it into cubes)
1/4 avocado sliced
Handful of mixed leaves
Handful of shredded cabbage (white and red) and carrot
1/4 red onion sliced
1/4 cup frozen shelled edamame beans (defrosted)
1/2 cup of cooked brown rice
Handful of fresh coriander
Sprinkle of sesame seeds
Coconut aminos (as dressing)
Method
Pour boiled water over the edamame beans to defrost them, drain and set aside. Cook the brown rice as per instructions on packet.
Prepare the rest of the vegetables, salad and fresh coriander and place arrange in a bowl.
Add the edamame beans, cooked brown rice, tuna sashimi and sprinkle with sesame seeds.
Lightly dress the salad with coconut aminos as the dressing (or dressing over your choice).
