Sweet Potato Brownies

Satisfy your sweet cravings and nourish your body with the perfect treat: Sweet Potato Brownies. Ingredients 

1 medium sweet potato

1/2 cup raw cacao powder

2 tbsp collagen powder

1/3 cup cashew butter

1/2 tsp baking soda

1 tsp vanilla essence

1 egg

2 tbsp coconut oil

1/4 cup maple syrup


Method

  1. Preheat the oven to 180* fan forced and line a baking tin with baking paper.

  2. Peel the sweet potato, chop into cubes and boil in water until soft.

  3. Meanwhile, in a large mixing bowl, mix all of the ingredients together.

  4. Once the sweet potato is cooked, drain the water and place into a food processor. Blend until smooth. Add the blended sweet potato into the bowl and stir well.

  5. Pour into the baking tin and place in the oven for 20-25 mins or until cooked through.

  6. If you are in your luteal phase (pre-menstrual), enjoy with an afternoon cacao drink or matcha… Because if you are one of my clients and practicing ‘Cycle Syncing’, you should know that drinking coffee in the week prior to your period is a big no no!
